Grandma's Pecan Pie Recipes

From Susan Johnson's recipe collection.

Pecan Pie #1

2 eggs
1C Karo Syrup Blue Label
1/8 t salt
1 t vanilla
1 C sugar
2 T melted butter
1 C pecan meats

Mix ingredients together, adding pecans last. Pour into unbaked pie shell. Bake at 400F for 15 minutes, reduce heat to 350°F bake 30 to 35 minutes longer.

Pecan Pie #2

1/2 pastry shell recipe
2 eggs, beaten
1C Karo Syrup, Blue Label
1/8 t salt
1 t vanilla
1 C sugar
2 T melted butter or margarine
1 C pecan meats

Roll pastry 1/8 inch thick, line 9-inch pie pan.

Mix remaining ingreedients together, adding pecans last. Pour into pastry shell. Bake in hot oven (400°F) 40 minutes or until a silver knife inserted in center of filling comes out clean.

Pecan Pie #3

3 beaten eggs
1 cup brown sugar
1 cup light corn syrup
1 cup pecan halves
1 tsp. vanilla

Beat eggs and sugar, add corn syrup, nuts and vanilla. Bake at 300°F 1 hour.

Pecan Pie #4

1 cup white corn syrup
1 cup dark brown sugar
1/3 cup melted butter
1 heaping cup shelled pecans
3 whole eggs (beaten)
dash vanilla
pinch salt

Mix above ingreedients well, pour into an unbaked 9-inch pie shell and bake in a 350°F oven for 45 to 50 minutes. Cool and top with whipped cream or ice cream.

Dear Abby's Pecan Pie

9-inch unbaked pie crust
1 cup light corn syrup
1 cup firmly packed dark brown sugar
3 eggs, slightly beaten
1/3 cup butter, melted
1/3 teaspoon salt
1 teaspoon vanilla
1 heaping cup pecans halves

Heat oven to 350F

In a large bowl, combine corn syrup, sugar, eggs, butter, salt and vanilla, mix well. Pour filling into unbaked pie crust, sprincle with pecan halves.

Bake at 350°F for 45 to 50 minutes or until center is set. (Toothpick inserted in center will come out clean when pie is done.) Cool. If crust or pie appears to be getting too brown, cover with foil for the remaining baking time.

Col. Sanders' Pecan Pie

4 eggs, slightly beaten
1 cup golden Karo
1/3 cup sugar
pinch salt
1 Tbs. lemon juice or vinigar
4 Tbs. butter
2 tsp. vanilla

Mix together thoroughly

2/3 cup pecan halves into unbaked pie shell. Pour in the above mixture.Bake 35 minutes in 325°F-350°F oven.

Easy Karo Pecan Pie

3 eggs, slightly beaten
1 cup Karo light or dark corn syrup
1 cup sugar
2 Tbsp margarine, melted
1 tsp vanilla
1 1/2 cups pecan halves
1 unbaked (9“) pie shell

In large bowl stir first 5 ingreedients until well blended. Stir in pecans. Pour into pie shell. Bake in 350°F oven 50 to 55 minutes or unti;l knife halfway between center and edge comes out clean. Cool.

Chocolate Pecan Pie

Follow recipe for Easy Karo Pecan Pie. Melt 4 squares (1 oz each) semisweet chocolate with margarine.

No Crust Pecan Pie

3 eggs
1 cup graham cracker crumbs
1/2 cup chopped pecans
1 cup sugar
1 teaspoon baking powder

Beat yolks until lemon color. Add baking powder to sugar, then add to yolks. Stir in crumbs and nuts. Fold in beaten egg whites. Pour into buttered pan (regular layer cake pan). Bake 30 to 35 minutes at 350 degrees.

Serve with whipped cream, top with maraschino cherries.
